sorbet of butter milk, vild chive juice & pea crust.

Oysters & perch with lemon verbena- & horseradish jelly,
broad bean purée & blue clay baked parsley root.

Beef & scallop tartar with rockweed purée, dry pickled
vegetables & rusk served with yogurt mayonnaise.

Baltic cod marinated in seawater, charcoal baked with
reed, crab in oat porridge, pike roe, bouillon of roasted fish
bones & rooster with carrot & cucumber.

Seared herb spiced top round steak of veal with deep-fried
brisket of veal & molasses bread, cauliflower & loan lichen,
sweetbread fried in garlic ash & red wine jus.

Cheese truffle with warm marmalade of arctic
raspberries & blackened goat cheese.

Mint & cherry flambéed plums, Savarin soaked in Oaxen
cherry lemonade & milk chocolate mousse with nut sugar.
