EXECUTIVE HEAD CHEF

Michael Caines MBE
Executive Head Chef

Michael Caines MBE is considered one of the most brilliant chefs in the United Kingdom.

He has been cooking at The Bath Priory’s sister property, Gidleigh Park, since 1994, and he and his team have held 2 Michelin stars since 1999. At the time, Michael was the youngest chef to achieve this high accolade. Michael is from Exeter, and spent formative periods of his career working with master chefs such as Raymond Blanc, Joël Robuchon and the late Bernard Loiseau.

At Gidleigh Park, Michael has created a very personal yet classic style of cuisine that utilises the finest West Country produce and ingredients to produce innovative and exciting modern European cuisine of the highest order. In 2001 his talent and achievements were recognised by his peers when he won Chef of the Year at the prestigious Catey Awards.

In 2004, Michael went into partnership with Andrew Brownsword to found ABode, a fast-growing group of boutique hotels, all with Michael Caines' dining establishments. Michael Caines was awarded an MBE in 2006 for Services to the Hospitality Industry and in 2007 he received the “AA Chefs’ Chef of the Year 2007-2008” Award, voted for by his peers.

Eager to bring more synergy between these two unique sister hotels, Michael is looking forward to his new role as Executive Head Chef at The Bath Priory from February 2009.

“Cooking is my passion. I love it and I can never see myself not being in the kitchen,” says Michael.

Head Chef - James Sheridan
Head Chef

James Sheridan joins the restaurant from The Bath Priory's sister hotel Gidleigh Park in Devon, where he worked as Sous Chef for two years with Executive Chef Michael Caines MBE, creating innovative, modern European cuisine.

Previous to Gidleigh Park, James worked at the Michelin starred Thornton's in the Fitzwilliam Hotel, Dublin, as a Chef de Partie under the renowned Chef Kevin Thornton (the only Irish Chef ever to hold two Michelin stars). Prior to there, he enjoyed placements at the Botanical Hotel in Melbourne, Australia and the Radii Restaurant at the Park Hyatt hotel in Melbourne.

James has many years of experience behind him and relishes the new challenge as Head Chef working alongside Michael Caines at The Bath Priory.
