Loirston hotel  are seeking to recruit a Chef de Partie for their busy Kitchen
 Hours of work 10.00am – 13.00  16.00- 21.00  5.5 days / 7
SCOPE OF WORK: To prepare and cook all dishes on menus. Undertaking such other kitchen duties as may be assigned by the Head Chef or Sous Chef in the interests of efficient kitchen operations and the excellence of its products.
1. Supervising and instructing Commis Chef(s).
2. Undertaking preparatory work (min-en-place) for all menu items.
3. Preparing, cooking and presenting dishes in accordance with product specifications detailed in the Operating Manual or on task cards.
4. Undertaking cooking duties in respect of the preparation of staff meals.
5. Ensuring that portion control specifications are adhered to.
6. Preparing dishes and menu items as assigned by senior staff.
7. When operating and cleaning kitchen equipment, adhering strictly to correct procedures and with regard to hygiene and safety requirements.
8. Ensuring that work areas are kept clean and tidy at all times and that all food stuffs are handled in a safe and hygienic manner.
9. Exercising proper control of consumable stocks and due respect for hotel property at all times.
10. Complying fully with all regulations relating with Health and Safety, employees' code of conduct, hygienic food handling and storage thereof, fire precautions and emergency procedures.
11. Always wearing protective clothing as supplied when on duty, and ensuring a very high standard of personal hygiene.

Overall scope and general purpose of job
To cook all dishes on menus, delegate and supervise the work of all kitchen staff. To assist the Head Chef in all culinary aspects and to take charge of the kitchen in his absence ensuring a smooth and efficient operation whilst adhering to company and statutory regulations and to give quality service to both customers and colleagues.

Main duties and responsibilities
•       To oversee the physical food stock take in order to ensure efficient cost control.
•       To manage stock ordering to ensure maximum profit with minimum waste.
•       To assist the Head Chef in producing departmental budgets in line with main hotel budget
•       To participate in the recruit and training of all kitchen staff in order to ensure a highly motivated and efficient team.
•       To assist the Head Chef with the creation and implementation of all menus.
•       To monitor the supervision exercise by the sous chef over staff to ensure that they comply fully with all regulations relating to Health and safety ,employees code of conduct, wearing of protective clothing, fire precautions and emergency procedures and high standards of personal hygiene.
•       Maintain a high level of personal hygiene and appearance, wearing the appropriate uniform/protective clothing.

Salary from £18-20K depending on experience
