Noodle Chain in Moscow

I am looking for a 'Wagamama' style chef to start up a similar noodle chain in Moscow, Russia.  A chef who specialises in noodles, and wok food.

WAGAMAMA STYLE RESTAURANT CHAIN

Position to start immediately

Project description

 

Noodle restaurant chain (similar to Wagamama). Average bill 15-20 USD. The first outlet is to be located in a business center (office building)

 

Executive chief responsibilities (EC)

-          Start up

o    To work out kitchen layout

o    Work out and present in pictures (with technical characteristics) the list of equipment

o    Work out the menu (items, cost calculations) and presentation

o    To make staff training and perform on-job coaching

o    To make staff working schedules

o    To start the new outlet

-          Operations - To set up all kitchen operations in the restaurant under Leadership and “hands on” approach

o    Controls over menu, new items development

o    Controls over costs

o    Controls over hygiene norms

o    Controls over production (quality, presentation, etc.)

o    Staff trainings

o    Etc.

 

Remuneration

-          Will depend upon interview and tasting.

 

Working hours

-          5 days per week (on start-up may be required to work on week-ends)

-          Unlimited working hours

 

Term of contract

-          1 year, with prolongation if in agreement  

-          2 week annual holiday entitlement (with 2 month notification)

 

Additional bonuses covered by Employer

-          Apartment located close to the restaurant

-          Two-way air ticket (once per year)

-          Standard medical insurance

-          English-Russian interpreter

 

Preliminary starting date

-          1 December 2008 (provided all visa and paperwork required under the Russian Law are in place)
