We are seeking a dynamic Executive Chef to join the Foreign Correspondents' Club of Japan family. Detail oriented, a love for the culinary arts, and strong leadership abilities are key attributes for this position. With a setting high atop the Yurakucho Denki North Building, The Pen & Quill Dining Room, Main Bar, Sushi Restaurant, and our ample meeting space all boast panoramic views of Tokyo. Our Executive Chef will be responsible for overseeing the Kitchen Department operations and a staff of 25. He or she will ensure that member expectations are met and that high food quality and kitchen cleanliness levels are maintained. Our Executive Chef will be responsible for scheduling, mentoring, and developing the culinary team while managing payroll expenses and food cost.

This position is responsible for the day to day running of the Hotel kitchen operation and food production, with a strong emphasis on delivering creative high quality cuisine in a cost efficient and profitable manner. Lead, motivate and manage a team of approx 60 Chefs.

This Hotel is a 500 plus room hotel which runs annualized occupancies in excess of 90%. It has 4 restaurants, room service and a bar as well as significant banqueting facilities.

The ideal candidate will have had significant experience in a large Food & Beverage operation in a hotel environment. The position calls for a high degree of creativity and product innovation so the ability to demonstrate this will be important.

Able to make sound business decisions, manage human resource productivity as well as manage all costs and general expenses will be vital along with an ability to understand and interpret financial statements. This position will also call for “out of the box” style thinking. While this is a “hands on” position, delegation will be equally important. A broad range of leadership competencies will be important.

This Hotel Group is a fast paced young company whose portfolio of hotels is growing and therefore the need to attract, retain and develop executives for future opportunities of greater responsibility is important.

This position is part of the executive management structure and relies heavily on teamwork. The incumbent will be someone who is a strong team player, offering input outside of his/her own discipline as well as accepting the same from others.

To keep pace with the changing business environment and consumer preferences this Hotel needs to grow its F&B product injecting a more modern & creative approach to its restaurant and banqueting products, menu design, presentation and delivery. The incumbent will therefore need to flexible in their approach and make changes to achieve these goals or where a more strategic approach is required work in consultation with the Executive team. In addition, this position may also call for the incumbent to provide guidance & assistance to other Hotels upon request.
